Faubourg

Following the success of Faubourg in Montclair, NJ, in 2024, the Daniel Boulud alums’ Dominique Paulin and Chef Olivier Muller opened their 2nd location in Weehawken, NJ. Their kitchen is in the extremely capable hands of Chef de Cuisine Marcos Salazar, who has been trained in their French technique.

About the space

Faubourg is divided into three sections to create distinct experiences. The elongated main dining room is positioned in front of two unique focal points: an open kitchen and a grand 16-seat bar. Adjacent to the main dining room is an intimate cocktail lounge with ambient lighting and comfortable seating. A separate private dining room seats up to 30 people. The corner restaurant is surrounded by floor to ceiling windows allowing natural light to stream in. Along the windows, Faubourg Weehawken will offer outdoor seating with a partial view of the Manhattan skyline. The design includes original lighting fixtures, custom metalwork, and elegant millwork.
